Description

The natural cellar where this cheese matures is characterised by a stable room temperature that remains the same throughout the year as well as constant humidity levels. This is how the cheese acquires its characteristic tangy flavour and smooth texture.

Yellowish interior and surface-ripened rind with red cultures. Storage life 35 days.
