PGE/ΠΓΕ Fasolia Gigantes Elefantes Prespon Florinas Φασόλια (Γίγαντες Ελέφαντες) Πρεσπών Φλώρινας is a bean (type Phaseohis cocimus or multiflonis) which is grown in the Prespon area of Greece, is kidney-shaped and white in colour. 1000 beans weigh 1200 grams or over. The bean has to conform to the quality standards for Greek-grown pre-packed edible pulses. Chemical composition: carbohydrates 61.4%; proteins 26.1%; fibre 6.6%; ash 4.1%; fats 1.8%.

Geographical area: The Prespon area of Fiorina Prefecture. Specifically, in the contiguous rural areas of the municipalities of Mikrolimni, Karion, Lefkonos, Píateos, Lemou Ag. Germanou, Ag. Ahilios, Vronderou and Kalithea.

Evidence: Historically, this bean has been grown only in the above-named municipalities of the Prespon area.

Method of production: The Giant-Elephant bean is grown outdoors.

Link: The bean is is cultivated traditionally in the Prespon area and is packed locally and marketed under the name "Prespon Giant-Elephant Beans". Because of its proximity to the Great Prespa and Little Prespa lakes, the Prespon area has a microclimate better than that of the rest of the Fiorina prefecture which has a typical continental climate. The soil is a light silt with a low lime content. Water is plentiful and there is a rich low-standing flora. The bean's outstanding reputation is due to its organoleptic features.

Gastronomy: The PGE/ΠΓΕ Fasolia Gigantes Elefantes Prespon Florinas Φασόλια (Γίγαντες Ελέφαντες) Πρεσπών Φλώρινας should be kept in a dry place under good hygienic conditions. This precious legume is consumed cooked, either baked or boiled. It is often used coupled with other vegetable products, onions, tomatoes, celery and carrots, seasoned with oil. It is also used by the canning industry.
