Fagiolo di Sarconi

IGP Fagiolo di Sarconi are beans grown in a small hilly area in southern Italy, south of the city of Potenza in the region of Basilicata.

The climate in this area is continental with cold winters and average precipitation occurring mostly in the summer. These conditions are beneficial for the production of beans, which can tolerate a wide range of weather conditions, but tend to prefer warmer climates.

IGP Fagiolo di Sarconi are obtained from the Cannellini and Borlotti varieties. The beans are available in green pods or as a dried product. Sowing takes place in the period from April to May at an altitude of 600 meters. The climbing beans are sown between June and July. Harvesting is manual and the period depends on the type of beans.

The Cannellini beans are popular in central and southern Italy. They are related to the Kidney bean and are larger than Navy beans. The Borlotti beans, also called Roman beans, are a variety of Cranberry beans, bred in Italy.

It is believed that the cultivation of beans is a centuries-old tradition in this region.
