Double cream pasta sauce (cheat)

This quick sauce is a brilliant starting point for a pasta sauce. It's fine as it stands and superb if cheese is added too ( see Variations below).
Ingredients

- 225 ml (8 fl oz) double cream
- 25 g (1 oz) butter
- Freshly ground black pepper
- sea salt
Method
- Heat the double cream in a small pan until it begins to boil.
- Immediately reduce to a simmer.
- Add the butter, stir and simmer for 10 minutes whilst the pasta cooks
- Drain the pasta (not too thoroughly, try and retain some of the cooking water), return to its pan and pour the sauce over the pasta. Season and mix well.

Serve immediately

Try any of the following (add cheese with the butter, everything else add to sauce before adding the pasta):
- Bacon / Home smoked bacon
- Parma ham
- Mushrooms
- Cheese - especially Parmesan and blue cheeses
- Peeled prawns
- Fresh herbs in large quantities
