Dauphin cheese

Origin

  • This cheese is produced in the French region of Nord-Pas de Calais where it is thought that Louis XIV and the Dauphin visited and admired the local cheese. It is further thought that the inhabitants of the region to adjust both its name and the shape in honour of the Dauphin.

  • Yeasty aroma and spicy flavour.

Strength and texture

  • Medium. Matured for 3-4 months. Firm, but tender texture.

  • Dolphin shaped, but somestimes produced in blocks or croissant shaped.

Description

Reddish rind. Tarragon and pepper are added to the cheese.
