This traditional Cuban style stuffed roast turkey recipe is ideal for Christmas and other seasonal occasions. The recipe comes courtesy of Carla Cancio-Bello from Cuban Cuisine UK.

This recipe can also be used to roast chickens.

Mise en place

  • Preheat the oven to 160° C (325° F - gas 3), [fan oven 140° C & reduce cooking time by 10 mins per hour]


Method

  1. Clean the turkey and remove the parson's nose.
  2. Crush garlic with salt, pepper, cumin and oregano.
  3. Add orange juice and rub turkey inside and out with this mixture.
  4. Place onion rings on top and allow to marinate for at least 2 hours and if possible overnight.
  5. Wash beans and soak for a couple of hours.
  6. Cook in the same water until soft. together with the green pepper.
  7. Fry the two slices of bacon and in the same fat sauté the chopped onion, crushed garlic and chopped green pepper.
  8. Add to the softened beans. Add washed rice, salt, spices and bacon.
  9. Cook over medium heat until rice is dry but not quite done. It will finish cooking inside the turkey.
  10. Stuff turkey and sew up well.
  11. Pour wine over the turkey and place the 6 slices of bacon on top.
  12. Roast for 3 hours at 160° C (325° F - gas 3)
  13. Rest for 15 minutes before carving.

Variations

If using chickens rather than a turkey, use 4 x 900g (2 lb) chickens and roast for 1 hour at 160° C (325° F - gas 3).
