Corleggy cheese

Corleggy is a hard, artisan, pasteurised goats’ milk cheese made in Co. Cavan. The milk is produced by a large herd of goats that graze the lush drumlins along the River Erne.

The cheese is matured for 8 weeks to 4 months, depending on the season, weather, humidity and the seasonality of the grass and herbs available to the goats at the time of production.

The rind of Corleggy is natural, formed by bathing the cheese in sea salt brine. Hard cheese made from goats’ milk is rare. This one is particularly special because the production process is very small. Since this it contains only non-animal rennet, it can be eaten by vegetarians.
