A cheese press is a device used to exert a constant pressure on cheese during the manufacturing process. The cheese is usually wrapped in cheesecloth and placed inside a 2 part cheese mould. This step helps to bind the curds together and is usually completed over a 24/48 hour period.

Water is a very easy way to provide an accurate and known weight for a press. 1 pint = 1 lb so 1 gallon of water weighs about 8 pounds.
