Cerney Mini Ash is an artisan, unpasteurised goats’ milk cheese produced at Lady Angus’s Cerney Cheese dairy in North Cerney. Made with vegetarian rennet, the cheese is a small medium fat version of Cerney Pyramid and is coated with an oak ash/sea salt mix from France. Eaten at a week it has a fresh mild and pleasantly goaty flavour, with a suggestion of white wine and herbs. However, it will develop a deeper, fuller flavour as it matures. It is presented in a wooden box and has a shelf life of approximately four weeks. It weighs 120 g and is stocked by a number of Waitrose stores in Gloucestershire, as well as quality delicatessens across the UK.
