Further information

In the 16th century Suffolk had good reputation for cheese, but over the years the farmers found that butter production was more profitable. The result was that their Cheddar type cheese started to be made using left-over skimmed milk. This type of milk, whilst fine for Single Gloucester, was not suitable for Cheddar, resulting in their cheese being so hard that it was almost impossible to eat. Indeed, it was once described as fit only for pigs!

In a county which is renowned for its pork and ham, it is great to discover that there are now three excellent cheese-makers in Suffolk, although the cheeses currently may be difficult to obtain personally outside of East Anglia.
