Andalucía is Spain's most southerly region and is made up of 8 provinces: Huelva, Seville, Cádiz, Córdoba, Málaga, Jaén, Granada and Almería. The region is known more for its olive oil and ham production than its cheeses. Most restaurants will serve you with Manchego and in supermarkets you are more likely to encounter Gouda, for example, than a locally produced Grazalema. However, good cheese is produced in the region, although they are hardly known.

All Andaluz cheeses are produced using goats' and ewes' milk and as far as I can tell, none are available in the UK. If you like the sound of any of the cheeses included in these pages, make sure that you, or your friends bring some back when visiting the region.
