Calcium gluconolactate

Calcium gluconolactate (aka GLOCAL), is a soluble salt of calcium, lactic acid and gluconic acid used in effervescent calcium tablets. In molecular gastronomy, it is perfect for the technique of reverse spherification. It is sold as part of the El Bullí Texturas range under the name Gluco.
