====Origin====
Brebis de Haute-Provence is a soft [[ewes' milk cheese]] from Provence-Alpes-Côte d'Azur.  Like its variant Brebis du Luberon, this traditional [[cheese]] is decorated with [[herbs]] such as [[savory]]. 
 
It is matured for one month with its mild flavour becoming more complex over time.  It is consumed during the winter and spring.
 
Circular in shape, it has a diameter of 6.5 to 7 cm, is 3 cm high and weighs 120g.
