Boulette de Papleux is a soft, [[Unpasteurised|unpasteurised]] [[Cows' milk cheese|cows' milk cheese]] from the Nord-Pas de Calais region of [[France]]. It is an unusual in that rather being made from fresh [[Curd|curd]], it is made by [[Kneading|kneading]] rejected [[Maroilles]] [[Cheeses|cheeses]]. It is flavoured with [[Herbs|herbs]], [[Pepper|pepper]] and other [[Spices|spices]] according to taste of the producer and then steeped in [[Beer|beer]] . It is very spicy and strong, both in taste and aroma.<br />

Matured for 2-3 months, the [[Pear|pear]] shaped [[Cheese|cheese]] weighs 200g, has a diameter of 7.5 cm. at the base and a height of 10 cm. It contains 45% [[Fat|fat]] to dry matter.<br />
