As blue cheese has a very strong flavour, it suits equally strong and bitter salad leaves such as chicory, rocket and radicchio

Method

  1. Remove the rind from the cheese and crumble into half of the yogurt
  2. Add olive oil and lemon juice to the remaining yogurt and whisk to mix
  3. Season with black pepper and sprinkle in the chopped chives
