Bleu du Queyras cheese
Bleu de Queyras is an artisan thermised, blue, cows' milk cheese from the Hautes-Alpes département in Provence-Alpes-Côte d'Azur. It is produced using the same method as the classic blues, but salting takes place earlier which gives it a softer texture and milder flavour. It is matured in humid caves for at least 2 months.
Consumed from September to March, the cheese has an aroma of mushrooms and a gentle taste of animal and mushrooms. It is a natural blue-grey rind and a smooth interior.
