Bagòss di Bagolino cheese

Bagòss di Bagolino is a cheese made from the semi-skimmed milk of the Bruna Alpina breed of cows. 'Bagoss' in local dialect means 'Bagolino', an ancient mountain town of Brescia, the capital of Valle del Caffaro, where every year there is one of the most traditional of Italian carnivals.

The rind is smooth, slightly oily and hard and during maturation, the cheese is rubbed with raw linseed oil to keep it supple and limit the formation of unwanted mould. The interior is pale yellow in colour and has a slightly grainy texture. Its flavour is distinctive, very aromatic, but not spicy. It is a gourmet cheese and the most refined connoisseurs can recognise in its flavour and aroma the type of forage grazed, the time of production and the maturation period.

The cheese is semi-cooked cheese and is matured for 12-24 months. It has a cylindrical shape (diameter 40 cm) with a height of 12-14cm and has an average weight of 15-16 kg.
