Cheese and herb pastries from Turkey

Mise en place

  • Preheat the oven to 180° C (350° F - gas 4) and grease some baking sheets.

Method

  1. In a bowl, mix the cheeses, eggs, herbs, nutmeg and pepper.
  2. Cut the filo pastry sheets into four strips about 7.5cm wide.
  3. Keeping the pastry covered up with a damp cloth, brush one strip of pastry at a time with melted butter.
  4. Put a teaspoon of filling at the the bottom of one end of the strip and fold over one corner of the pastry to form a triangle.
  5. Keep folding over the pastry in the same way until you come to the end of the strip.
  6. Continue making the böreks until all the filling is used up.
  7. Bake on the baking sheets for about 30 minutes until crisp and golden.

Variations

Suggested herbs are a combination of two or more of the following: basil, parsley, mint,coriander and chives. You can also use young spinach leaves.

Use Lancashire, Cheshire or Caerphilly cheese instead of the feta.
