This simple avocado puree / sauce is a great accompaniment to dry meat or coarse white fish.

It does not keep well and quickly turns black, so make it the day you wish to use it.

Method

  1. Scoop the flesh from an avocado with a tablespoon
  2. Mash the flesh into a puree
  3. Season with salt and pepper and the juice and zest of a lemon
  4. Mix in the olive oil until the mixture is the consistency of mayonnaise
  5. Serve immediately

Serving suggestions

Serve as a dip for pitta breads or as an accompaniment to fish or meat.

Variations

Use the juice of a fresh lime instead of a lemon
