| Melt 2 tablespoons of [[Butter|butter]] in a large pan and [[Fry|fry]] the [[Onions|onions]] for 5 minutes until softened
| Add the [[Rice|rice]], [[Lentils|lentils]] and [[Pepper|pepper]] and stir [[Fry|fry]] for a minutes or two
| Add the [[Salt|salt]] and water and bring to the [[Boil|boil]]
| Reduce the heat, cover and [[Simmer|simmer]] for 40 minutes or until the [[Lentils|lentils]] are cooked
| Add the [[Pomegranate|pomegranate]] juice and [[Simmer|simmer]] for another 15 minutes
| Meanwhile, melt the remaining tablespoons of [[Butter|butter]] and [[Sautee|sautee]] the [[Mint|mint]] and [[Raisins|raisins]] for a minute
| Add to the soup with the chopped spring [[Onions|onions]] and [[Parsley|parsley]]
| Sprinkle with a few [[Pomegranate|pomegranate]] seeds and serve
