Armallan cheese

Armallan is a strong, semi-hard, unpasteurised goats' milk cheese produced by Jesús Calzón García at his artisan dairy Valle del Narcea in Tineo, Asturias. It is matured for just 10 days.

The cheese has a firm interior which is whitish yellow in colour and has sporadic, irregular holes and cracks. The rind, which is treated with beeswax is a very intense ivory, with light shades of brown in places. It has an intense aroma of goat, with a hint of hazelnuts and the outer part is steely and moist. On the palate, the texture is more melting than expected and the cheese has an intense aftertaste with slight hints of honey and hazelnuts.
