Mise en place

  • Preheat the oven to 200Β° C (400Β° F - gas 6)
  • Chill the pastry in the fridge for 30 minutes

Method

  1. Mix the brown sugar, ground cinnamon and flour together into a bowl
  2. Place a layer of apple slices in the base of a 900ml (1½ pint) pie dish
  3. Sprinkle over with some of the sugar, cinnamon and flour
  4. Repeat the layers until the dish is filled
  5. Dab the butter over the apples.
  6. Roll out the pastry until just larger than the pie dish
  7. Cover the dish with the pastry
  8. Decorate with any pastry scraps and cut a few slits in the top
  9. Brush with water and sprinkle with caster sugar.
  10. Bake for 45 minutes

Serving suggestions

Serve hot or cold, with custard

Variations

  • Use a mix of Bramley apples and Coxes apples
  • Add a tablespoon of chopped stem ginger
  • Add 100 g of wild blackberries. Don't bother with bland shop-bought rubbish
