Ajo Morado de Las Pedroñeras

The 'Indicación Geográfica Protegida' garlic ‘Ajo Morado de Las Pedroñeras’ is mainly cultivated and produced in the town of Las Pedroñeras (Cuenca) in Spain's Castilla-La Mancha, although its production has spread throughout the province of Cuenca and particularly to the comarca of Mancha Baja, as well as other neighbouring provinces i.e. Albacete, Ciudad Real and Toledo. It is handled and packed by companies based in the towns of La Alberca del Záncara, Mota del Cuervo, Las Pedroñeras, El Provencio, San Clemente and Santa Maria del Campo Rus.

The bulbs are medium to large, and are made up of around 8 to 10 purple cloves. The Ajo Morado de Las Pedroñeras has a strong odour and a spicy and stimulating taste. It is possible to buy this garlic peeled and chopped, or just peeled, in jars, but because preservatives have been added, it is not quite the same as fresh garlic.

The jarred, chopped garlic can be obtained in the UK from Delicioso at a very reasonable cost.
