Abrigo cheese

Abrigo is a hard, pasteurised goats' milk cheese produced in the Alto Maestrazgo area of Castellón in the region of Comunidad Valencia.

The cheese has a cylindrical shape, typical of the locality, which is split to form the crater of a volcano. It has a rustic, grey, mouldy rind, engraved with pretty floral motifs or symbols. The interior is compact and closed, slightly elastic and with an ivory-yellow colour. It has a developed, mild, yet intense, buttery flavour with a balanced saltiness with a taste of goats' milk and the aromatic herbs on which the goats consume as part of their diet. It is matured for 1-2 months and has a fat in dry matter of 45%.

This cheese won the silver medal in its category at the World Cheese Awards in London in 2007 and the gold medal in the same contest held in Las Palmas de Gran Canaria 2010.
