Açoreano is an artisan, semi-hard to hard cows’ [[milk]] [[cheese]] produced on the island of Flores in the Azores. <br />

The [[cheese]] has a yellowish colour and has very small holes. The dark yellow rind is hard and smooth and sometimes has brownish-red spots or is coated in paraffin wax. The aroma is strong and clean and the flavour is slightly spicy.<br />
