Ice-cream made with fresh strawberries. If your ice-cream maker has no built-in freezer, place your bowl in the freezer for a minimum of 12 hours before using.

- 600g fresh strawberries, hulled and cut in half (cut into quarters if particularly large)
- 60ml freshly squeezed lemon juice
- 330g caster sugar
- 330ml full fat milk
- 600ml double cream
- 1½ teaspoons vanilla extract
Method
- Place the strawberries in a bowl and mix with the lemon juice and 110g of the sugar and leave for 2 hours to allow the sugar to dissolve
- Pour into a tall jug and add the remaining ingredients except for the cream
- Blend until the mixture is smooth using a stick blender
- Add the cream and blend briefly
- Allow to chill in the fridge for at least 1 hour
- Pour into your ice-cream maker and churn according to the manufacturer's instructions
- Transfer into a container and keep in the freezer
