Wow-Wow [[Sauce]] (or Bow-wow sauce) is a sauce, apparently created by Dr William Kitchiner in the early 19th century. It contains [[Port|port]], [[Wine vinegar|wine vinegar]], [[Pickled walnuts|pickled walnuts]] or [[Pickled cucumbers|pickled cucumbers]] ([[Gherkins|gherkins]]), [[English mustard]] and [[Mushroom|mushroom]] [[Ketchup|ketchup]] in a base of [[Beef stock|beef stock]], [[Flour|flour]] and [[Butter|butter]].&lt;br /&gt;

===Method (historic)===&lt;br /&gt;

Chop some [[Parsley|parsley]]-leaves very finely, quarter two or three [[Pickled cucumbers|pickled cucumbers]] or [[Walnuts|walnuts]] and divide them into small squares and set them by ready; - put into a [[Sauce|sauce]]-pan a bit of [[Butter|butter]] the size of an [[Egg|egg]]; when it is melted, stir in to it a table-spoonful of fine [[Flour|flour]], and about half a pint of the [[Broth|broth]] in which the [[Beef|beef]] was [[Boiled|boiled]]; add a tablespoon of [[Vinegar|vinegar]], the like quantity of [[Mushroom|mushroom]] catchup, or [[Port wine]], or both and a [[Tea|tea]]-spoonful or made [[Mustard|mustard]]; let it [[Simmer|simmer]] till it is a thick as you wish, put in the [[Parsley|parsley]] and [[Pickles|pickles]] and pour over the beef - or rather send it up in a sauce-tureen.&lt;br /&gt;
