Waterloo is an unpasteurised [[cows&amp;#039; milk]] [[cheese]], which was originally produced on the estate of the Duke of Wellington, hence its name.  It is now made by Village Maid Cheese in Riseley, Berkshire.&lt;br /&gt;
&lt;br /&gt;
The [[cheese]] a mould-ripened soft [[cheese]], with a yellow interior.  The rind is a grey/rust colour and the cheese itself is runny, buttery and lightly salty towards the outside, with a firmer consistency and more acidic flavour towards the centre. It is produced in 750 g rounds.&lt;br /&gt;
