Vorarlberger Bergkäse is a [[g.U.]] hard, unpasteurised [[cows&amp;#039; milk cheese]] from the Bregenzerwald forest.&lt;br /&gt;
&lt;br /&gt;
The [[cheese]] has a firm but elastic texture and a uniform yellow colour with a strong and aromatic flavour.  It has some sporadic pea to cherry sized holes and a few fine cracks.  The natural rind is smeared and brown.&lt;br /&gt;
&lt;br /&gt;
Matured for between three and six months, the [[cheese]] weighs around 30 kg and is sold in packs of 250-350g.&lt;br /&gt;
