&amp;#039;&amp;#039;&amp;#039;Vieux-Lille&amp;#039;&amp;#039;&amp;#039; is a [[Maroilles cheese]] made in Avesnois (not in Lille) in the Nord département of the [[French]] region of Nord-Pas-de-Calais and comes from [[Unpasteurised|unpasteurised]] [[Cows&amp;#039; milk|cows&amp;#039; milk]] with a [[Fat|fat]] content of 45%. &lt;br /&gt;
&lt;br /&gt;
It is a square block measuring 13cm by 13cm and 5-6cm high and weighing 800g. It is made all year round. The 3 months brining process eliminates any rind, and the paste has a moist surface which is slightly grey in colour. Although the [[Cheese|cheese]] holds together when cut, the consistency is best described as semi-soft.  It is matured for 5-6 months and has a strong aroma, with a more pronounced, salty, spicy flavour than [[Maroilles]].&lt;br /&gt;

&amp;#039;&amp;#039;&amp;#039;Vieux-Lille&amp;#039;&amp;#039;&amp;#039; is also known as &amp;#039;&amp;#039;&amp;#039;Gris de Lille&amp;#039;&amp;#039;&amp;#039;, &amp;#039;&amp;#039;&amp;#039;Puant Macéré&amp;#039;&amp;#039;&amp;#039;, &amp;#039;&amp;#039;&amp;#039;Puant de Lille&amp;#039;&amp;#039;&amp;#039;, &amp;#039;&amp;#039;&amp;#039;Fromage fort de Béthune&amp;#039;&amp;#039;&amp;#039; and formerly &amp;#039;&amp;#039;&amp;#039;Maroilles Gris&amp;#039;&amp;#039;&amp;#039;.&lt;br /&gt;
