Hi Alberto,  thanks for your contribution to Caciocavallo di Agnone.  It is nice to have people from all over the world on Cookipedia.  The source of my information re pepper was:  http://www.formaggio.it/caciocavalloagnone.htm but sometimes I find that that site can be a little confusing as I have never learnt Italian.&lt;br /&gt;
&lt;br /&gt;
Any further contributions you can add to Italian cheese would be most appreciated.  I had no idea that Italy produced so many varieties of cheese.&lt;br /&gt;

Hi Julia, you are wellcome! Italy is very likely the european country having the greatest number of cheeses that are in a wide ranges of different species. Following the french president general De Gaulle, the excessive number of cheeses of a nation is a clear evidence of political anarchy :-)&lt;br /&gt;
