U Pecurinu is a semi-soft, [[Unpasteurised|unpasteurised]] [[Ewes&amp;#039; milk cheese|ewes&amp;#039; milk cheese]] from Corsica. It is covered in [[Herbs|herbs]] (known as &amp;#039;maquis&amp;#039;) native to the island and the flavours of this [[Cheese|cheese]] reveal that.  [[Animal rennet]] is used.&lt;br /&gt;
&lt;br /&gt;
The [[Cheese|cheese]] has a buttery, savoury flavour with an aroma of [[Herbs|herbs]] and hay.  It is rind-washed and has a delicate texture.&lt;br /&gt;
