Tuma ‘d Trausela is a fresh, [[Unpasteurised|unpasteurised]], [[Cows|cows]]’ [[Milk|milk]] [[Cheese|cheese]] produced in the Chiusella Valley near Torino by six artisan cheesemakers.  Rindless, it is white, or ivory white in colour and has no holes.  It has a soft, moist texture and a fine, delicate, creamy aroma and a sweet flavour.  It is consumed when it is no more than 2 days old.  Cylindrical in shape, it has a diameter of 25-35cm, a height of 4-5cm and weighs 900g-1.1kg.&lt;br /&gt;
