La Tomme de chèvre des Pyrénées is a [[Goats&amp;#039; milk cheese|goats&amp;#039; milk cheese]] from Languedoc-Roussillon is uncooked and pressed. [[Salted]] in [[Brine|brine]] tanks, the [[Cheese|cheese]] is then stored in relatively moist cellars, where it will be matured with meticulous care for up to 12 weeks. It has a subtle aroma.&lt;br /&gt;

The Tomme is cylindrical in shape with slightly rounded edges. It comes in two forms:&lt;br /&gt;
&lt;br /&gt;
- Tomme 2.5 kg, a diameter of 19 cm and a height of 8.5 cm.&lt;br /&gt;
&lt;br /&gt;
- The tommette 400 g, a diameter of 11 cm and 5 cm in height.&lt;br /&gt;
&lt;br /&gt;
It has a firm and supple interior made with [[Unpasteurised|unpasteurised]] or [[Pasteurised milk|pasteurised milk]] and melts in the mouth. White to light ivory in colour, it contrasts with the natural rinds, which itself is characterised by a mixture of white, grey and some red pigmentation. It has a subtle aroma and flavour.&lt;br /&gt;
