This [[Cheese|cheese]] is made at La Fromagerie de la Durance, at Guillestre between Gap and Briançon in the centre of the Hautes-Alpes.&lt;br /&gt;

Produced with [[Unpasteurised|unpasteurised]] [[Ewes&amp;#039; milk|ewes&amp;#039; milk]], it has a grey rind, which should be discarded as it containes [[Cheese|cheese]] mites.  It has a rich, meaty, yeasty flavour combined with a slight piquancy and a smooth nuttiness. It is a complex cheese, yet the flavours are well balanced and truly delicious.&lt;br /&gt;
