Toma di Lucana is produced from cows’ [[milk]] which is matured in warm, humid conditions.  It is then soaked in salted [[brine]].&lt;br /&gt;

The [[cheese]] has a soft, even, ivory interior and a sweet taste.  It is cylindrical shaped and weighs between 1.5 kg and 2 kg.&lt;br /&gt;
