At the Thai cookery demo I went to yesterday, the chap said not to peel ginger!  Apparently the skin has a lot of flavour and nutrients, so you only need to remove any bits that might look at bit manky --[[User:JuliaBalbilla|JuliaBalbilla]] ([[User talk:JuliaBalbilla|talk]]) 03:21, 18 October 2015 (BST)&lt;br /&gt;

That&amp;#039;s very interesting. I&amp;#039;ve always read, and peeled ginger, in most cases it probably would be good to leave it un-peeled.  You can&amp;#039;t beat &amp;#039;from the horses mouth&amp;#039;, so to speak.  Could you put that into a few sentences that give it a bit  of gravitas and I&amp;#039;&amp;#039; put it into a template that I can add as a footnote to anywhere that peeling ginger is mentioned?&lt;br /&gt;

There is no need to peel ginger.  As a result of attending a Thai cookery demo, we have learnt that peeling ginger is unnecessary unless for aesthetic purposes as the skin is high in fibre and full of flavour.  However, do remove any bits that have become tough or woody.  JB&lt;br /&gt;
