Yes, we enjoyed our meal!&lt;br /&gt;

But it was very dry despite adding 2 tins of tomatoes, 1 tin water and extra wine but not 2 cups stock!  I know I used enormous carrots but that shouldn&amp;#039;t be the effect surely? &lt;br /&gt;

Does a Dutch Oven have a good fitting lid? Wondering if too much water escaped from my casserole?&lt;br /&gt;

The one pictured was the final version I made, it is quite a large casserole / Dutch oven.  About the same size as a large glass casserole and does not have a good fitting lid.  If I ever want a perfect seal then I add a few layers of scrunched up tin-foil before putting on the lid.  I did not do that in this instance as it would have been photographed.&lt;br /&gt;

It is not cooked at very high temperature either so you&amp;#039;re not likely to loose much liquid during the cooking.  Lots of cornmeal might absorb some of the liquid.  Other than that the only thing that I can think of was that the instructions to cover the meat steaks / (shanks) was a little ambiguous, as it largely depends upon the casserole size.&lt;br /&gt;

I will make a small amend to mention checking the liquid levels whilst cooking and will endeavor to make this again and this time measure the exact amount of liquid.&lt;br /&gt;

You can see from the &amp;#039;finished&amp;#039; photo that there was a fair amount of gravy.&lt;br /&gt;

Made this again this weekend, following the recipe as printed and there was plenty of gravy - not at all dry.&lt;br /&gt;
