Sylphide is a range of processed [[Cheeses|cheeses]] produced in Franche-Comté by the Bel Group.  They contain just enough [[Fat|fat]] to ensure that they taste pleasant and to [[Preserve|preserve]] the nutritional qualities (calcium, protein, [[Vitamins|vitamins]] B2 and B12).&lt;br /&gt;
&lt;br /&gt;
There are 3 varieties, blue, [[Goat|goat]] and [[Gruyère]] and they contain just 7% [[Fat|fat]] to dry matter.  They are wrapped as individual portions weighing 16g.&lt;br /&gt;
