Stracchino toscano is a soft [[Cheese|cheese]] from the town of Sorano in the Tuscan province of Grosseto.  Ferments and [[Rennet|rennet]] are added to [[Pasteurised milk|pasteurised milk]] and the [[Curd|curd]] is cut several times.  The urds are transferred to moulds, which stacked one above the other, are turned several times until the optimum acidity has been reached.  After being immersed in [[Brine|brine]], the [[Cheese|cheese]] is left to mature in cells at a temperature of 4°C.  It is straw-coloured, has a slightly sweet flavour and a delicate aroma.  It is packed mostly in pats of 250g.&lt;br /&gt;
