[[Stithians cheese]] is a hard, [[Pasteurised|pasteurised]], [[Cows&amp;#039; milk cheese|cows&amp;#039; milk cheese]] produced by Catherine and Ben Mead at the Lynher Dairies [[Cheese]] Company at Pengreep Farm in the Cornish village of Ponsanooth.  The [[Milk|milk]] comes from their own herd of Friesian [[Cows|cows]].  It is an artisan cheese made with [[Vegetarian rennet|vegetarian rennet]] and is named after the nearby village of Stithians.  The cheese is not made very often and therefore can be difficult to obtain.&lt;br /&gt;
&lt;br /&gt;
[[Stithians cheese]] has a smooth texture with a few small holes and and is yellow in colour.  The natural rind can vary in colour from creamy yellow when young to rose through to almost black when maturation is delayed.  It has a milky flavour and contains small calcium crystals.  It is of medium strength and is matured for 20 weeks.&lt;br /&gt;
