St James is produced by Martin Gott of Holker Farm Dairy from unpasteurised ewes’ [[milk]]. The [[milk]] come from the hardy Lacaune breed of French sheep.&lt;br /&gt;
&lt;br /&gt;
The rind-washed [[cheese]] has a savoury flavour of smoked [[ham]] and has a crumbly texture.  It has received numerous awards including the James Aldridge Award for the &amp;#039;Best Unpasteurised Cheese of the Year&amp;#039; in 2005.&lt;br /&gt;
