Soria [[cheese]] is produced throughout the province of Soria and especially in the area of the capital itself.&lt;br /&gt;
&lt;br /&gt;
Four artisan [[cheeses]] are produced.  The first is a fresh one, similar in style to [[Queso de Burgos cheese]].  The others are hard and are made with [[cows’ milk]] (matured for 45 to 60 days), [[ewes’ milk]] (matured for at least six months) and a mixture of the two at a proportion of 70% and 30%, respectively (matured for at least 60 days).  The milk is [[pasteurised]] and animal [[rennet]] is used.&lt;br /&gt;
&lt;br /&gt;
The [[cheeses]] are salted by immersion in [[brine]] and aged in a controlled environment for the period that corresponds to each type.&lt;br /&gt;
