Somerset Camembert is a soft, mould-ripened, cows' milk cheese produced by [[The Lubborn Creamery]] of Cricket St Thomas in Somerset.<br />
<br />
The cheese has a straw-coloured interior, a white, bloomy rind and a soft, creamy texture. The flavour is slightly spicy, becoming stronger as it matures. The maturation period is 7 weeks and it is recommended by Lubborn that you eat it during the week before the use by date, for a fuller flavour. Its strength can range from medium to strong, depending how long you leave it. Each cheese comes in rounds of 220g.<br />

Somerset Camembert won a Silver Medal in its category at the British Cheese Awards and the Taste of the West Awards in 2004.<br />
<br />
You can serve the cheese as a snack accompanied by fruit and savoury biscuits or crusty bread or, you can bake it in the oven, studded with walnuts.<br />
