Slattato is produced from [[Unpasteurised|unpasteurised]] [[Cows&amp;#039; milk cheese|cows&amp;#039; milk cheese]] in the Montefeltro area of the [[Italian]] region of Marche.  It is only made from October to March and is matured in 7 days.  Round in shape, each [[Cheese|cheese]] weighs between 400g and 1.8kg.  It has a soft, [[Cream|cream]] coloured rind and a smooth, sweet-sour, white interior.  Traditionally it is sold wrapped in [[Fig|fig]] or [[Cabbage|cabbage]] leaves.&lt;br /&gt;
