Shaoxing cooking wine, ''Shaohsing cooking wine'', ''Sichuan cooking wine'', to my taste, is a much smoother version of Chinkiang rice vinegar. It is not a wine that you would drink but it is perfect for cooking.

I've used it in salad dressings for [[beanshoots]] and found that it at about 15% mixture it is a perfect addition to [[malt vinegar]] for making [[pickling vinegar]].

===Suppliers===
Most [[Chinese_ingredients_(supplier)|Chinese_ingredient suppliers]] should stock this, or something similar. It is about three times the price of rice vinegar, but it remember, it is a wine. [[Oriental Delight (Norwich)]] stocks the Taiwanese product; pictured, and on-line suppliers such as Amazon should stock this also.
