Serranía de Ronda is a semi-hard, unpasteurised goats’ [[milk]] [[cheese]] produced in the mountains around Ronda in the province of Málaga.&lt;br /&gt;
&lt;br /&gt;
The ivory coloured cheese has small irregular holes and a layered, crumbly texture which develops with age.  The more mature cellar aged cheeses have a brown rind, whereas others which have been soaked in oil have a waxy yellow rind.  It is matured fro 2-3 months depending on the season.&lt;br /&gt;
&lt;br /&gt;
The [[cheese]] is quite strong, with a goaty aroma, which can become rancid after a while.  The flavour is slightly acid and salty, leaving a tangy aftertaste.&lt;br /&gt;
&lt;br /&gt;
The [[cheese]] is cylindrical and between 1 and 2 kg.&lt;br /&gt;
