Serra da Estrela is an artisan, [[DOP (Portuguese)|DOP]], ewes’ [[milk]] [[cheese]] which has been made for centuries by shepherds in the Serra da Estrela Mountains in Beira. It is known as the ‘King of Portuguese Cheese’.<br />
<br />
To make the [[cheese]], the [[milk]] is curdled by a [[rennet]] of cardoon flowers or lambs’ [[rennet]] and the [[curds]] are broken up manually. Soft and almost spreadable, the white cheese has a smooth, thin, straw-coloured rind and an unmistakable aroma and flavour. It has a clean, perfumed bouquet, and a sweet, burnt [[toffee]] finish. <br />
<br />
The [[cheese]] is soft and cylindrical with slightly bulging sides and a stronger, harder and crumblier version is also available. The soft variety is only produced in autumn and winter. It can weigh between 1 and 2 kg, is 25 cm in diameter and is 5-7 cm high.<br />
