Scuete Frante is made with very fresh [[Ricotta|ricotta]] Val d&amp;#039;Arzino, Val Tramontina and Carnia in the [[Italian]] region of Friuli-Venezia Giulia.  It is matured in autumn for up to 2 to 3 months.  It is creamy and off-white in colour, with a strong and spicy flavour if left to mature.  Traditionally this was a method of preservation of ricotta probably used as an alternative to [[Smoking|smoking]].&lt;br /&gt;
