Sbrinz, which claims to be Europe’s oldest [[cheese]], comes from central Switzerland and is often used instead of [[Parmesan]] in Swiss cuisine.  Produced from full-fat cows’ [[milk]], it is a very hard [[cheese]].&lt;br /&gt;
&lt;br /&gt;
The [[AOC]] [[cheese]] must mature for 16 months before it can be sold as Sbrinz, but the full flavour only develops after about 24-30 months, although it can be matured for as long as 8 years,  If it is matured for less than 16 months, it is called &amp;#039;&amp;#039;&amp;#039;Spalen&amp;#039;&amp;#039;&amp;#039;.&lt;br /&gt;
